
Soft paneer cubes simmered in a rich, spiced tomato-onion gravy, layered with aromatic spices for a comforting, flavorful experience.
250g paneer, cubed
2 large onions, finely chopped
2 large tomatoes, pureed
1 tbsp ginger-garlic paste
1/4 cup cashews, soaked
2 tbsp oil or ghee
1 tsp cumin seeds
1 tsp turmeric powder
1 tbsp coriander powder
1 tsp garam masala
1/2 tsp red chili powder
1/2 cup fresh cream (optional)
1 tsp kasuri methi (dried fenugreek leaves)
Salt to taste
Fresh coriander leaves for garnish
Shallow fry the paneer cubes in a pan until lightly golden. Set aside.
Heat oil in a pan. Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown. Add ginger-garlic paste and sauté for another minute until fragrant.
Add turmeric powder, coriander powder, and red chili powder. Stir for 30 seconds.
Add tomato puree and cook until the oil separates from the masala, about 5-7 minutes.
Blend the soaked cashews into a smooth paste and add it to the gravy. Cook for another 2-3 minutes.
Add 1 cup of water, garam masala, and salt. Bring the gravy to a simmer.
Gently add the fried paneer cubes and simmer for 5 minutes for the flavors to meld.
Crush kasuri methi between your palms and add it to the curry. Stir in fresh cream if using.
Garnish with fresh coriander leaves and serve hot with naan or rice.
